Fire Roasted Hot Salsa!

To every thing there is a season....

It was a very windy rainy day. I picked alot of tomatoes and made them into ketchup

my younger brothers helped. Tomorrow we are going to make roasted salsa and regular HOT salsa. I am going to make jam out of the yellow "garden peach"tomatoes. I made some last year from little sweet orange tomatoes and it turn out real well.

Keeping the whey Hot while stretching is important. I had to reheat it once while doing this batch. I just take the cheese out of the whey, and heat the whey in a pot, and then pour the whey back on the cheese. And start stretching.14: Get all of the cheese curds into one clump, with ether ,spoon or hands. (this is when the optional gloves can be used) Then pick up this clump and while still hold it let it slowly fall into bowl. keep doing this “ stretching” until the cheese is smooth and shiny.

Faithfulness

Today was a rainy cloudy day. It is still raining as I am typing. I made chevre' and some small cheeses for the winter. My brother planted wheat. All the gardens are looking almost done.

I need to make another batch of salsa. There are alot of tomatoes coming on.

Summer and winter and springtime and harvest,

Sun, moon and stars in their courses above

Join with all nature in manifold witness

To Thy great faithfulness, mercy and love.

Today I made Feta, I did an experiment over the week end. I froze the milk in a big pot, This way I was able to keep the milk fresh until today. I was able to make cheese from about four gallons. It turned out well! This past saturday I took my marinated feta to a celebration of

agriculture, every one really enjoyed it. Now I have to make more. I want to make enough for the winter time when the goats are dry.

I started some socks for my brother, I making them from a whole fleece. I made the yarn last winter. The wool is from our sheep,

todays doings and thoughts

Today I canned the salsa, and made cheese.

I made feta, I put grape leaves on the chevre' that I made three weeks ago.

Mama got me a new cheese book two weeks ago, that has so many neat cheese recipes in it

The title is : 200 Easy Homemade Cheese Recipes. I am really enjoying it.

What is this life for ? Why are we here? What is this earth and sky for? What was it all created for?

"Thou art worthy,O Lord, to receive glory and

honour and power:

for Thou hast created all things,

and for Thy pleasure they are and were created".

Why are so many people wasting their time for nothing? Oh that men might learn to know their Maker, the one who made the Heavens and the Earth. He spoke" Let there be Light" and there was light! Oh! this is the light that is shinning in this dark world today. He is speaking, Ears are listening, People are awaking from their darkened sleep. This word " Let there be Light" has become flesh and is dwelling among us. Than why should we keep on sinning?

Why should we keep on knowing the right thing to do, but not doing it? Sin is darkness.

Where light is there is no darkness.

All we like sheep have gone astray,we have turned every one to his own way but the Lord has laid on him the iniquity of us all. In His great love where with He loved us, even when we were dead in our sin He has quickened us together with Christ. Praise God! Thank Him for His grace. He mercies endureth for ever! He is bringing us all unto Himself.

The chef end of man is to glorify God and enjoy Him forever.

Do we bring pleasure to our Maker in everything that we do, say,and think?

Lord the light of Your love is shining
